Eggs and coffee are among the staples for breakfast, but few people would guess to mix them in one cup.
Egg coffee is a traditional drink in Scandinavian cuisine. Swedish immigrants brought this unique way of brewing coffee to America in the late 19th century, and their families continued to brew it that way.

A raw egg is added to the coffee grounds before brewing coffee, creating a brewed mixture like earth. Some egg coffee drinkers also use eggshells, but this can be done at will.
The addition of an egg helps to purify the coffee, making it easier for the thicker to separate from the water. Egg white absorbs tannins and impurities, which usually give a slight bitterness to the drink, pulling it out of the ground and increasing caffeine.
The result is a light, clean drink that does not contain bitterness or acid and a velvety texture. After a few minutes of slow cooking, the grounds will stick together and float to the top, and therefore the coffee will taste soft.
By adding cold water at the end, you create a French press effect, causing the thick to settle on the bottom of the bowl.
You can use either an enamel coffee pot or a saucepan to make egg coffee.

Ingredients:
9 ¼ cups of water
¾ cup freshly ground coffee (medium to coarse)
1 big egg
1 glass of cold water
Optional: eggshell
Prepare all the ingredients:
1. Bring 9 cups of water to a boil in a saucepan or coffee pot.
2. While you wait for the water to boil, combine ground coffee, the remaining ¼ cup of water, and an egg in a small bowl.
3. When the water starts to boil, gently pour in the egg and coffee mixture.
4. Lower the heat and keep it low for 3 minutes, and make sure that it does not boil over.
5. The coffee grounds will gradually stick together into one mass, which will float at the top of the coffee pot. Once this happens, remove the coffee pot from the fire.
6. Pour in a glass of cold water and leave it for 10 minutes. This will allow it to settle more densely on the bottom of the tank.
7. Once the grounds have settled, pour the coffee through a strainer into the cups and enjoy a nice drink.
8. You can also use a French press to make egg coffee. To do this, bring the coffee mixture with the egg almost to a boil, then pour it into the French press, let it brew for 5 minutes, lower the plunger and pour into the cup.

Tips:
The longer the coffee is brewed on low heat, the stronger its taste will be, but without bitterness.
The coffee grounds mixture can easily boil, so watch its preparation and lower the heat as needed.
