Easter cake

Ingredients:
Milk — 380 ml
Yeast — 50 g
Flour — 1.3 kg
Eggs — 5 pieces
Sugar — 400 g
Butter — 75 g
Raisins — 100 g
Salt — half a teaspoon
Sunflower oil — 50 ml
Vanilla sugar — 10 g
For the glaze: powdered sugar, 2 whites
Cooking recipe:

First, prepare the dough: pour warm milk into a bowl, add about 100 g of sugar, half a teaspoon of salt and crumble 50 g of compressed yeast.
Mix everything until the yeast dissolves and put it in a warm place for about half an hour.

While the dough is ripening, we will prepare the raisins: pour boiling water over 100 g of the raisins washed by us and let them stand for 10 minutes.

After 10 minutes, drain the water and put the raisins on a towel to dry.

The dough is already ripe, we start kneading the dough: break 5 eggs into a bowl, add 10 g of vanilla sugar and the remaining 300 g of sugar.
Whisk everything for a few minutes until fluffy and homogeneous.

Add 75 g of melted butter here, mix a little.

Add the already ripe dough to this mass and mix everything again with a mixer.
Put the dough whisk on the mixer and, gradually adding half a kilogram of flour, knead the dough.

The dough has become so thick that it stops pouring – then we put it on a table sprinkled with plenty of flour.
Gradually adding more flour, knead the dough until smooth and smooth (about 10 minutes).

Add 50 g of sunflower oil to the already mixed dough in several sets, and knead for another 1-2 minutes.

Add a tablespoon of flour to the already dried raisins and mix. Pour raisins onto our dough and knead it to the end.

Put the kneaded dough in a large bowl or saucepan sprinkled with flour.
Cover the pan with cling film and put it in a warm place to come.

After the dough has doubled, knead it with our hands and hit the table several times to let the air out.
Roll the dough back into a ball and put it back in the pan to come up.

After the dough has come up a second time, take a piece of dough so large that it fills the form halfway.
Mash each piece of dough to make a smooth top and put it in the form.

We put all the forms with the dough on a baking sheet on which we will bake cakes. To prevent the dough from weathering, periodically grease it with water on top.

Leave the dough for a little while. When the dough has doubled, gently put it in an oven preheated to 180 degrees.
Bake for at least 30 minutes, check the readiness with a wooden stick – it must remain dry.

Put the baked cakes on the grill and let them cool completely.
Let's make colored sugar for decoration:

Take a tablespoon of sugar and pour it into a bowl.
Pour a few drops of water into a spoon and dissolve food coloring in it.

Pour the colored water into sugar and mix everything well.
Now let's prepare the icing sugar:

Pour one teaspoon of gelatin into a bowl, then pour two tablespoons of water. Mix everything and leave it for 5-10 minutes for the gelatin to swell.

While the gelatin is swelling, pour 5 tablespoons of water into the saucepan, and add about a teaspoon of lemon juice to them and add about 200 g of sugar.
Put everything on the fire and bring it to a boil – all the sugar must dissolve.

When the sugar dissolves, remove the syrup from the heat and add the swollen gelatin to it. Gelatin is dissolved in syrup.
Beat the whole mixture with a mixer for 4-5 minutes – a dense white mass should be obtained.

With the prepared glaze, we immediately decorate the already cooled cakes.
It is necessary to cover with glaze quickly, as it cools and hardens (it can be heated on low heat while stirring).

While the icing on the cakes has not yet hardened, decorate them with colored sugar.

On top of colored sugar, we can decorate our cakes with mastic flowers.
