1. Fragrant Peking duck
Interestingly, during the reign of the Mongolian Yuan dynasty, baked duck was advised to be introduced into the diet by a court physician. So we didn’t embellish much by saying that this dish came down to us directly from the imperial table.
The preparation of the dish takes almost 2 days. First, the bird is rubbed with honey and baked on cherry wood. When the dish is ready, the duck is cut into 80-120 pieces. Various snacks are also served with meat, including thin pancakes, sliced onions and other vegetables.
Oddly enough, sugar is often offered to guests. It is designed for oily duck skin.
The highest skill is considered to cut meat in front of visitors. Such a subtle skill is passed down in the Middle Kingdom from generation to generation. Some famous chefs have been cooking this one dish all their lives.
2. Donkey burger
This curiosity came to Beijing from the neighboring province of Hebei. A sandwich with donkey meat is not considered a delicacy in China. The combination of crispy buns, sweet seasonings and juicy meat will not leave anyone indifferent. Restaurants specializing in donkey dishes are scattered throughout the capital. You can find both dumplings and noodles. The price of such a burger will be 8-12 CNY.
3. Noodles with Zhejiang sauce
The dish includes handmade wheat noodles, minced pork and seasonal vegetables. Beijing chefs use a special Zhejiang sauce as a dressing.
Interestingly, Beijing residents prefer to eat Zhajiangmian in the hot season. It is believed that noodles combined with fresh vegetables are refreshing in summer.
The dish can be found on almost every corner of the capital and it is not expensive at all — 15 CNY.
4. Mongolian samovar
The history of the preparation of the so-called samovar (or Khogo) has been going on for 1000 years. The beauty of the dish is that you can enjoy cooking it yourself. A cauldron with soup and various ingredients, including meat, vegetables and mushrooms, is served on the table. Visitors choose the broth themselves. When the liquid in the boiler boils, thinly sliced products can be immersed in it. It is believed that this method of cooking helps to preserve all the useful properties.
5. Pea pie
Wangdouhuang is a favorite dessert of the Chinese in the spring. A piquant pie made from pea puree is so popular due to its sweet and fresh taste. The snack is made from peas, Chinese dates and sugar.
Wangdouhan was adored by Empress Cixi. Fortunately, in order to taste a pie melting in your mouth in our time, you no longer need to be a member of the imperial family.
